RECIPE: Crazy Good Bacon Honey Butter Roasted Carrots

Yeah… this one is very good… and it was a cooking accident! After cooking bacon on the grill griddle, we ran out of room for our honey butter roasted carrots while cooking kabobs on the rest of the grill. So, we moved the carrots over to the bacon grease covered griddle to finish… and voila! Crazy good bacon honey butter roasted carrots were born. An incredible side for any outdoor BBQ or tailgate. You can even make it without the bacon for a (slightly) healthier dish!

INGREDIENTS:
– 12-15 large organic carrots
– 4 T salted butter
– 2 T honey
– 4 slices thick-cut bacon
– 1 tsp fresh cracked pepper

INSTRUCTIONS:
1. Preheat oven to 350º. Preheat grill to 400º. Trim stalks off of carrots.
2. Place carrots on a foil-lined sheet pan and bake for 15 minutes (or until slightly soft).
3. Cook bacon and reserve 2 T bacon grease plus pan scrapings.
4. In a microwave safe bowl, place butter, honey, and cracked pepper. Melt all together and mix well along with reserved bacon grease and pan scrapings.
5. Place carrots directly on grill, and baste them with honey-butter-bacon-pepper mixture until slightly charred all the way around – turning occasionally. Cook for about 5-8 minutes directly over heat.
6. Optional: crumble cooked bacon to garnish finished carrots.
